I am not sure I understand your question, but you can plot the zeta function as f(x)=zeta(x).
Sorry for being so vague, I'm mathematically illiterate.
I would like to replicate the graph in the attached file.

You can plot it as the parametric function: x(t)=re(zeta(0.5+i*t)), y(t)=im(zeta(0.5+i*t))
You need to set From=0 and To=34.
You also need to enable Calculate with complex numbers in the Edit|Axes dialog under the Settings tab.
